Sencha
The most popular tea in Japan, Sencha is rich and full-bodied with a subtle grassiness. Sencha is processed differently than Chinese green tea in that it is first steamed for 15-20 seconds to prevent oxidation before it is oven-dried. The steaming imparts a greener, more vibrant color to the tea.
