The Chardonnay grapes were hand harvested on fruit and flower days from 37 year old vines. They were then whole bunch pressed and fermented with wild yeast in French barriques. It underwent natural malolactic fermentation prior to receiving 9 months of oak maturation. 30 % of the barrels were new and the balance was one year old.
